Easy Healthy Recipes

Easy healthy recipes made in your organic kitchen should include all organic ingredients, of course. You might think that any recipe that uses organic fresh fruits, vegetables, meats, fats or dairy would automatically be organic but the recipe needs to include spices, sweeteners and condiments that come from organic sources, such as flour or sugar, to be a truly organic recipe.

So, depending on how organic you want your recipe to be, look for organic versions of all the ingredients in your favorite recipes.

To make sure your baby gets the healthiest start possible, try making organic baby food yourself .

Organic tomatoes, organic apples, and organic peaches are three fruits proven to be more nutritious than conventionally-grown versions so I’ve featured those three fruits in these following easy healthy recipes.

Savory Stuffed Tomatoes
    12 large Organic Tomatoes

    2 Cups Cooked Organic rice

    2 TB chopped onion

    2 TB currants, plumped

    3 cloves garlic, minced

    ½ tsp salt

    black pepper

    ¾ cups olive oil Chopped mint or basil (garnish)

Remove the tops off the tomatoes and scoop flesh out. Mix it with rice and then add the chopped onions, currants, garlic, salt and pepper. Stuff the rice mixture back into the tomatoes and arrange in casserole dish. Pour olive oil over the tomatoes, cover and bake at 350 F for 25-30 minutes. Garnish with the chopped mint or basil. Serves 12.

Sweet and Tart Baked Apples

    4 Tart Granny Smith Organic Apples

    Juice of 1/2 lemon

    Ground cinnamon

    2 teaspoons organic Tupelo Honey

    2 TB Golden Raisins

    1/4 Cups Orange Juice

Grease a glass baking pan with butter. Cut a cone shape out of the top of each apple and spoon some lemon juice into cut out. Sprinkle cinnamon inside then add some honey and juice to each and stuff each with raisins. Microwave, lightly covered, until skins have split and apples are softened. Serve hot.

Creamy Peach Cobbler

    Filling

    1 cup organic sugar

    2 organic eggs

    2 TB all purpose flour

    1/2 tsp nutmeg

    4 cups organic fresh peaches (4 to 6)

    Cobbler

    1 1/2 cups organic all purpose flour

    2 TB organic sugar

    1 tsp baking powder

    1/2 tsp salt

    1/3 cup softened butter

    1 organic egg, slightly beaten

    3 TB organic milk

    3 TB organic sugar

Preheat oven to 400 degrees. Peel and slice peaches. Stir all filling ingredients together (except for peaches) in a large bowl. Then, gently mix in peaches. Pour into a 13 x 9 inch pan.

In a medium bowl, stir together all the dry cobbler ingredients. Then, cut in butter until crumbly. Stir in egg and milk until just moistened. Crumble cobbler mixture over peaches and sprinkle with 3 T sugar. Bake for 40 to 45 minutes or until golden brown and bubbly around edges. Serve with whipped cream or vanilla ice cream. (Substitute 2 (16 oz.) packages of sliced, frozen peaches for 4 cups sliced, fresh peaches.) Makes 8 servings.
